Method: • Wash the mustard greens, spinach, palak and methi thoroughly to remove any dirt. Chop them coarsely. • In Prestige’s Pressure cooker, add the chopped greens, some water and salt to taste. Cook them for 6-7 whistles. • Add 2-3 tsp Makki ka atta and mix well. • Now use a Prestige hand blender to puree the greens. You can keep it slightly chunky or smooth, based on preference. • Heat mustard oil in a pan. Add chopped ginger, garlic and green chillies. • Add the chopped onion and Sauté until golden brown. • Add the chopped tomatoes and cook until they turn soft and oil starts to separate. • Now, add salt, red chili powder, and garam masala. Stir well. • Add the pureed greens to the pan. Stir everything together. Adjust the consistency with water if needed. • Cover for about 15-20 minutes on low heat allowing the flavors to blend. • Finish with tadka by adding chopped garlic, coriander , dry red chilli, degi mirch in ghee. • For extra richness, you can add a dollop of homemade butter on cooked saag and let it melt in. • Serve Sarson da Saag with makki di roti.
