Vegan Chocolate Hazelnut Log

A simple no-bake Christmas cake that’s both indulgent and packed with healthy goodness, our Ayurvedic take on a Yule log, made with the most comforting, grounding and fulfilling seasonal ingredients and spices, also just so happens to be vegan.
Ingredients
For the crunchy base:
Two handfuls of whole hazelnuts
Two handfuls of pitted dates
For the centre:
1kg butternut squash, peeled and cut into chunks
250g hazelnut butter
80g coconut oil
300g dark chocolate, melted in a double boiler
Nutmeg, cinnamon, cardamom, chilli (optional)
For the topping:
Icing sugar and crushed hazelnuts
Method
First, make the base. With a pestle and mortar or in a blender, finely grind the dates and hazelnuts together to make the crunchy base. Line the bottom of a cake mould with parchment paper, then press the mixture firmly into an even layer at the base.
Then onto the centre. Steam or boil the butternut squash until soft, then blend it into a smooth purée along with the hazelnut butter, coconut oil, spices, and melted dark chocolate. Once the mixture is silky and uniform, pour over the crunchy base in the cake mould.
Cover the and refrigerate for at least 12 hours to allow the log to set.
Carefully remove the log from the mould just before serving. Decorate with spices, powdered sugar, or a sprinkling of crushed hazelnut for a super festive feel ✨
