Onam Healthy Recipe:
Sadya Special Varutharacha Sambar
INGREDIENTS:
Toor dal -1/2 cup
Drumsticks-1
Brinjal-1
carrot -1
Ladies finger-5-6
Tomato-1
Shallots-8-10
Cucumber-1 cup
Turmeric powder
Tamarind-gooseberry size
Oil-1 tbsp
Chana dal-1/2 tsp
Urad dal -1/2 tsp
Cumin seeds-1/2 tsp
Fenugreek seeds -1/6 tsp
Coconut-1/4 cup
Shallots-3
Curry leaves-4
Dry red chillie-3-4
Coriander seeds-1 tbsp
Oil-1tbsp
Mustard seeds-1 tsp
Dry red chillies-2-3
Curry leaves

METHOD:
Pressure cook dal with cucumber, turmeric powder and water
After the pressure settles open the cooker and add all vegetables.cook for 1 whistle
In a frying pan add 1 tbsp oil.
Add chana dal, urad dal, fenugreek seeds, cumin seeds. Coconut ,shallots curry leaves, coriander seeds and chillies until coconut get brown color.
Then grind this to a fine paste .
After the pressure settles open the cooker and add ground paste.
Add tamarind juice
Took it in medium flame till the gravy thickens.
Heat oil in pan splutter mustard seeds fenugreek seeds, dre red chillies , curry leaves and chilli powder. Pour this to sambar and mix well.keep covered still served.
