I've made this Punjabi traditional dish Sarson da Saag paneer with Makki ki roti using Prestige Pressure cooker, Prestige blender and Prestige kadhai.
Here’s a recipe to make it:
Ingredients:
*Green Mustard leaves(sarson) – 2 bunch, washed and chopped
*Spinach (palak) – 200gm
*Bathua - 250gm
*Methi– 150gm
*Onion – 2 medium, finely chopped
*Tomatoes – 3, finely chopped
*Green chilies – 2, finely chopped
*Ginger – 1-inch piece, chopped
*Garlic – 4-5 cloves, minced
*Dry red chilli- 2 pcs
*Salt to taste
*Red chilli powder- 1/2 tsp
*Garam masala- 1/2 tsp
*Mustard oil - 3-4tsp
*Ghee (for tadka) - 2tsp
*Water- 1/4 glass
*Maize flour (makki ka atta) – 2-3 tbsp (for thickening)
*For garnishing- Homemade butter & Chopped coriander
Method:
• Wash the mustard greens, spinach, palak and methi thoroughly to remove any dirt. Chop them coarsely.
• In Prestige’s Pressure cooker, add the chopped greens, some water and salt to taste. Cook them for 6-7 whistles.
• Add 2-3 tsp Makki ka atta and mix well.
• Now use a Prestige hand blender to puree the greens. You can keep it slightly chunky or smooth, based on preference.
• Heat mustard oil in a pan. Add chopped ginger, garlic and green chillies.
• Add the chopped onion and Sauté until golden brown.
• Add the chopped tomatoes and cook until they turn soft and oil starts to separate.
• Now, add salt, red chili powder, and garam masala. Stir well.
• Add the pureed greens to the pan. Stir everything together. Adjust the consistency with water if needed.
• Cover for about 15-20 minutes on low heat allowing the flavors to blend.
• Finish with tadka by adding chopped garlic, coriander , dry red chilli, degi mirch in ghee.
• For extra richness, you can add a dollop of homemade butter on cooked saag and let it melt in.
• Serve Sarson da Saag with makki di roti.
