My name is L.V. Swaroop, representing The Drawing Room by Smoke house Deli, Bangalore, and this is my entry for the Sherbet-inspired drink category using Malhar Gin. I call it ‘Rooted Soul’.
RECIPE:
• Alluvial-filtered Malhar Citrus Gin: 60 ml
• Panakam Vermouth: 45 ml
• Byadagi Chilli Tincture: 2 Dashes
Garnish : ‘Uppu Milagai’
(Curd marinated dried byadagi chilli)
As a proud South Indian, my inspiration comes from Panakam, a traditional sherbet renowned for its depth of flavor and cultural significance.
A few years ago, I had the privilege of attending a wedding at the Madigeri Estate in Coorg, where the essence of Panakam was served in mud pots made from alluvial soil. A wise farmer explained how these pots enhance the flavor, imparting earthy undertones that elevate the drink’s authenticity. This experience sparked the idea for a cocktail that bridges these traditions with modern mixology.
This competition has given me the perfect stage to present my creation, blending heritage with contemporary techniques using Malhar Gin. In an innovative twist, I’ve filtered Malhar Gin through alluvial soil from the Madigeri Estate in Coorg. Rich in natural iron minerals, this soil enriches the gin’s purity and depth. To complete the flavor profile, I’ve added Byadagi chilli, sourced from Bandipur Forest.
‘The Rooted Soul’ is my homage to tradition, reimagined with the artistry of modern mixology. It reflects the essence of Panakam while showcasing innovation and craftsmanship.
