@diabesmartindia Low GI rice has only 50 GI, its clinically tested and tastes like regular rice and Diabetic Sweetener has Monk fruit and Stevia as the primary ingredient, giving you the perfect sweetness but no after taste ?
Here goes the details of the recipe ? - 1/4 cup Low GI Rice from @diabesmartindia - 2 tbsp whole cashews (soaked in warm water for 1 hour ) - 1 cup + more as required milk ( I used soy milk here ) - 1 and Half tbsp Diabetic Sweetener from @diabesmartindia - a few saffron strands crushed and soaked in water for 1 hour - 2 tbsp rose water - 1 tsp crushed cardamom - 1/4 cup chopped nuts of choice ( I used almonds and pistachio)
• Soak the Low GI rice in water for 30 mins • Take the soaked cashews in a blender, add a little water and blend to get a smooth paste • Heat the milk in a pan, add the cashew paste and keep stirring for few minutes • Coarsely rind the soaked rice with a little water , add this to the pan • Cook for around 15 to 20 mins until the rice is cooked and soft • Add saffron water, cardamom, rose water, mix well and cook for 5 mins • Lastly add the sweetener, the nuts and keep stirring until the whole Phirni starts to thicken • Once done, switch off the gas, cool down the phirni completely before serving • You can also refrigerate for a few hours before serving • While serving garnish with chopped nuts of choice, rose petals (dry can be added) or silver bark • Dig in and enjoy ❤️
