Day 1 of 30-The Kitchen Sink Crustless Quiche recipe
Our founder call it the kitchen sink quiche because it is very forgiving and accepts any wilting vegetable in the fridge, transforming it into a gourmet creation! The best part is that it is brimming with good fats from eggs, cheese and butter, while being low carb!
You’ll need
1. Eggs - 9
2. Real Cheddar Cheese (not processed cheese) - 200 g block
3. Vegs - 1 Red pepper, 1 yellow pepper, 1 broccoli, bunch of spinach
4. Butter - 7 Tablespoons
5. Salt to taste, Italian seasoning to taste
Method:
1. Wash and chop all the vegs
2. Saute the peppers and spinach, each separately, in 1 Tablespoon of butter - cover the pan for 2 minutes to cook through
3. Saute the broccoli in 3 Tablespoons butter, so that it gets a nice, roasted, nutty aroma - cover the pan for 3 minutes to cook through
4. Beat the eggs
5. Grate the cheese
6. Add all the ingredients in a large bowl, and mix them by hand, topping up with salt and Italian seasoning
7. Heat a cast iron pan, sizzle 1 Tablespoon of butter in it - pour the egg-cheese-veg mixture in the pan, cover and let it cook
8. When the center is still a little wet and jiggly, turn off the heat - let the quiche cook in the residual heat from the cast iron pan
9. Slice up like pizzas and enjoy. Pack leftovers for the next day’s lunch, the flavours come together better when they sit in the fridge overnight
