I recently tried the Spinach and Mushroom Omelette at Eddy's Cafe and I have to say, it was delicious! Not only was it budget-friendly, but the combination of spinach and mushrooms was perfect. I recently had the pleasure of trying out the High Protein - Soboro Don Low GI Rice Bowl at ATH - All Things Healthy! Let me just say, it definitely lived up to its name.
